Vegetarian Tomago Gohan (Japanese Egg Rice)

Ingredients:

  • Drizzle of avocado oil or extra-virgin olive oil
  • 2 to 3 cups hot, cooked jasmine rice or brown rice
  • 2 large eggs
  • Splash of low-sodium soy sauce or tamari
  • 1 scallion, finely chopped
  • Sesame seeds, for sprinkling

Optional Toppings:

  • Extra egg yolks
  • Sliced avocado
  • Roasted sweet potato cubes or broccoli
  • Pickled red onions or pickled ginger
  • Thinly sliced nori or furikake
  • Microgreens or sprouts
  • A splash of rice vinegar or lime juice for brightness

Instructions:

  1. Divide the hot rice between two bowls. While the rice is steaming, crack 1 egg into each bowl. Add a splash of soy sauce or tamari and stir quickly and vigorously. The heat of the rice will gently cook the egg, creating a creamy, silky coating on the rice.
  2. Sprinkle the rice with chopped scallions and sesame seeds.
  3. Add your choice of toppings, layering flavors and textures to your liking. A combination of creamy avocado, roasted vegetables, and tangy pickled additions creates a balanced bowl.
  4. Serve immediately with extra soy sauce or tamari on the side for seasoning.
