Mango Lime Sorbet

Ingredients:

  • 6 cups (24 oz.) frozen mango chunks
  • 1/3 cup honey or light maple syrup (as a substitute for agave)
  • 3 tablespoons freshly squeezed lime juice
  • Fresh raspberries for garnish (optional)

Instructions:

  1. Add the frozen mango chunks to a food processor and pulse until the pieces are finely broken up. Scrape down the sides as needed for even processing.
  2. Pour in the honey (or syrup) and lime juice. Continue blending for 2-3 minutes, stopping occasionally to scrape down the sides, until the mixture becomes smooth and creamy.
  3. For a soft-serve consistency, enjoy immediately. For a firmer texture, transfer the mixture into a loaf pan or freezer-safe container. Cover tightly and freeze for at least 4 hours.
  4. Scoop the sorbet into bowls or cones, and garnish with fresh raspberries if desired.
