Honey Garlic Chicken & Broccoli Stir-Fry

Ingredients
- ½ cup low-sodium chicken broth
- ⅓ cup reduced-sodium soy sauce or tamari
- 3 cloves garlic, minced
- 3 tablespoons honey
- 2 tablespoons cornstarch
- 1 tablespoon freshly grated ginger
- 2 teaspoons toasted sesame oil
- 1 tablespoon avocado oil or neutral oil
- 1 pound boneless, skinless chicken thighs or breasts, cut into ½-inch pieces
- 2 medium heads broccoli, cut into bite-sized florets
- Cooked jasmine rice or brown rice, for serving
- Toasted sesame seeds, for garnish
Instructions
1. Make the Sauce:
In a small bowl, whisk together the chicken broth, soy sauce, garlic, honey, cornstarch, ginger, and sesame oil until smooth. Set aside.
2. Cook the Chicken:
Heat avocado oil in a large skillet or wok over high heat. Add the chicken in a single layer and let it sear undisturbed for 1 to 2 minutes. Stir and continue cooking for about 5 minutes, until golden brown on all sides and fully cooked. Transfer to a plate.
3. Steam the Broccoli:
Reduce heat to medium-low. Add the broccoli to the same skillet and pour in the prepared sauce. Cover and let steam for 2 to 3 minutes, until crisp-tender.
4. Combine & Thicken:
Uncover the skillet and return the cooked chicken along with any juices. Stir continuously for 1 to 2 minutes, allowing the sauce to thicken and coat the chicken and broccoli evenly.
5. Serve & Garnish:
Spoon the stir-fry over bowls of rice and sprinkle with toasted sesame seeds. Serve warm and enjoy!
