Honey Dijon Glazed Salmon with Roasted Sweet Potatoes & Green Beans

Ingredients
- 4 salmon fillets
- 2 medium sweet potatoes, peeled and cubed
- 1 bunch green beans, trimmed
- 5 tablespoons olive oil, divided
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 clove garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon salt, divided
- ½ teaspoon black pepper, divided
- ½ teaspoon crushed red pepper flakes (optional)
Instructions
1. Preheat & Prepare:
Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Season the Vegetables:
Place the cubed sweet potatoes on one side of the baking sheet and drizzle with 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Toss to coat.
On the other side, add the green beans and drizzle with 1 tablespoon olive oil, ¼ teaspoon salt, and ¼ teaspoon black pepper. Toss well.
3. Roast the Vegetables:
Bake for 20 minutes while preparing the salmon glaze.
4. Make the Honey Dijon Glaze:
In a small bowl, whisk together 1 tablespoon olive oil, Dijon mustard, honey, minced garlic, smoked paprika, and crushed red pepper flakes (if using).
5. Add the Salmon & Finish Roasting:
Once the vegetables have roasted for 20 minutes, remove the baking sheet from the oven and nestle the salmon fillets among them. Brush the salmon generously with the honey Dijon glaze.
6. Bake to Perfection:
Return the baking sheet to the oven and bake for another 12-14 minutes, or until the salmon is cooked through and flakes easily with a fork.
7. Serve & Enjoy:
Plate the salmon alongside the roasted sweet potatoes and green beans. Serve warm and enjoy!
