Herbed Egg Salad Recipe

Ingredients:

  • 6 large eggs
  • ¼ cup mayonnaise
  • 2 to 3 teaspoons Dijon mustard
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon sea salt
  • Freshly cracked black pepper
  • ¼ cup finely diced red onion
  • 1 tablespoon fresh chives, minced
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon capers (optional)

Instructions:

  1. Hard-boil the eggs using your preferred method. Once cooked, peel and roughly chop them.
  2. In a medium-sized bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, sea salt, and a few grinds of black pepper.
  3. Stir the diced red onion into the dressing. Gently fold in the chopped eggs, chives, dill, and capers (if using) until evenly mixed.
  4. Cover the bowl and refrigerate for about 20 minutes to let the flavors meld.
  5. Give the egg salad a quick stir, adjust seasoning as needed, and serve.
