Hearty Turkey Chili

Ingredients:

  • 1 Tbsp olive oil
  • 1 large red onion, finely diced
  • 1 bell pepper, seeds and ribs removed, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 4 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 1 1/2 lbs ground turkey
  • 1 Tbsp chili powder
  • 2 tsp kosher salt
  • 2 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp ground mustard
  • 1/2 tsp cayenne pepper
  • Freshly ground black pepper, to taste
  • 1 cup lager beer
  • 1 (15-oz) can fire-roasted tomatoes
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can kidney beans, drained and rinsed
  • 2 tsp chicken or beef bouillon
  • Shredded cheddar, sour cream, fresh cilantro, and crackers or corn chips for serving

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the onion and bell pepper, cooking until softened, about 6–7 minutes. Stir in the jalapeño and garlic, cooking for an additional minute until fragrant.
  2. Add the tomato paste and mix until the vegetables are well coated and the paste deepens in color, about 2 minutes. Add the ground turkey, breaking it apart with a spoon, and cook until no longer pink, about 7 minutes.
  3. Stir in the chili powder, salt, cumin, coriander, oregano, mustard, cayenne, and a few grinds of black pepper. Pour in the lager and scrape up any browned bits from the bottom of the pot. Let simmer for 2–3 minutes, allowing the liquid to reduce slightly.
  4. Add the fire-roasted tomatoes, black beans, kidney beans, and bouillon. Bring the mixture to a boil, then reduce the heat to medium and let it simmer, stirring occasionally, until the chili thickens, about 40–45 minutes. Adjust seasonings to taste.
  5. Divide the chili into bowls and garnish with your choice of shredded cheddar, sour cream, fresh cilantro, and crackers or corn chips.
