Golden Peach-Raspberry Crumble

Ingredients

For the Filling:

  • 2 pounds (about 6 cups) sliced peaches (fresh or thawed frozen)
  • 2 cups fresh or frozen raspberries
  • ¼ cup melted salted butter
  • 1 tablespoon vanilla extract or vanilla bean paste
  • 1 tablespoon fresh lemon juice
  • 6 tablespoons granulated sugar

For the Topping:

  • 2 cups old-fashioned oats
  • 1 cup chopped pecans
  • 1 cup packed light brown sugar
  • 1 cup all-purpose flour
  • ¾ teaspoon salt
  • ¾ cup melted salted butter

Instructions:

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the sliced peaches and raspberries. In a separate small bowl, mix together the melted butter, vanilla, and lemon juice. Drizzle this mixture over the fruit, then toss gently to coat. Spread the fruit in an even layer on a rimmed baking dish. Sprinkle the granulated sugar evenly over the top and set aside.
  2. In another bowl, stir together the oats, chopped pecans, brown sugar, flour, and salt. Pour in the melted butter and mix until the topping becomes crumbly and evenly moistened.
  3. Evenly sprinkle the crumble topping over the fruit mixture. Place the dish in the oven and bake for about 35 minutes, or until the topping turns golden brown and the fruit is bubbling around the edges.
  4. Let the crumble cool slightly before serving. Pair it with a scoop of vanilla ice cream for the perfect finishing touch.
