Garlic Bacon Ranch Chicken Skillet

Ingredients
- 4 slices thick-cut bacon
- 4 boneless, skinless chicken breasts (about 1¾ lbs.)
- Kosher salt and freshly ground black pepper, to taste
- 1 teaspoon smoked paprika (for extra depth)
- 2 teaspoons ranch seasoning
- 2 cloves garlic, minced
- 1½ cups shredded mozzarella cheese
- ¼ cup shredded sharp cheddar (for extra richness)
- 1 tablespoon butter
- 2 tablespoons chopped chives, for garnish
Instructions
1. Crisp the Bacon:
In a large skillet over medium heat, cook the bacon until crispy, flipping once, about 8 minutes. Transfer to a paper towel-lined plate. Once cooled, crumble into bite-sized pieces. Drain all but 2 tablespoons of bacon fat from the skillet.
2. Sear the Chicken:
Season the chicken breasts with salt, black pepper, and smoked paprika. Heat the skillet over medium-high heat and add the chicken. Cook for about 6 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
3. Infuse with Garlic & Ranch Flavor:
Reduce heat to medium, add butter and minced garlic to the skillet, stirring for 30 seconds until fragrant. Return the chicken to the pan, sprinkle evenly with ranch seasoning, and top with mozzarella and cheddar cheese.
4. Melt the Cheese:
Cover the skillet and cook for about 5 minutes, until the cheese is melted and bubbly.
5. Finish & Serve:
Sprinkle the crumbled bacon and chopped chives over the chicken. Serve warm and enjoy!
