Fresh Fruit Dessert Pizza

Ingredients

For the Cookie Crust:

  • 1 1/3 cups unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 tsp orange zest
  • 1 tsp vanilla extract
  • 2 large eggs, at room temperature
  • 2 tbsp whole milk, at room temperature
  • 4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt

For the Frosting:

  • 2 jars (7 oz. each) marshmallow creme
  • 2 packages (8 oz. each) cream cheese

To Decorate:

  • Mango, peeled and cubed
  • Strawberries, hulled and sliced
  • Canned mandarin oranges, drained
  • Kiwi, peeled and sliced
  • Blueberries
  • Raspberries
  • Optional: Peaches and pears, sliced

Directions:

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, beat together the butter, sugar, orange zest, and vanilla until creamy. Add the eggs one at a time, mixing until fluffy. Stir in the milk.In a separate bowl, whisk the flour, baking powder, and salt together. Gradually combine this mixture with the wet ingredients. Divide the dough in half and flatten each portion into discs between sheets of parchment paper. Chill in the refrigerator for 1 hour or freeze for 20 minutes.
  3. Roll each dough disc into a circle about 11 inches wide, or press into a sheet pan for one large pizza crust.
  4. Bake until the edges turn golden, 15 to 18 minutes. Allow the crust to cool completely.
  5. Using a mixer with a whisk attachment, blend the marshmallow creme and cream cheese until smooth and fluffy. Spread the frosting evenly over the cooled crusts.
  6. Arrange the sliced fruits creatively on top of the frosted crust. Slice into wedges or squares for serving.
