Creamy Avocado Toast with Egg

Ingredients:

  • 1 teaspoon butter
  • 2 eggs
  • 2 slices multigrain bread
  • 1 ripe avocado, pitted and peeled
  • 1 teaspoon fresh lemon juice (or balsamic vinegar, if preferred)
  • A pinch of cayenne pepper
  • Sea salt, to taste
  • Ground black pepper, to taste

Instructions:

  1. Heat the butter in a skillet over medium-low heat. Crack the eggs gently into the skillet, keeping them side by side. Cook for 2 to 3 minutes until the whites are set and firm on the bottom. Carefully flip the eggs without breaking the yolks and cook for another 2 to 5 minutes, depending on how runny you like your yolks.
  2. While the eggs are cooking, toast the bread slices to your desired level of crispness. This should take about 3 to 5 minutes.
  3. In a small bowl, mash the avocado until smooth. Stir in the lemon juice (or balsamic vinegar), cayenne pepper, and a pinch of sea salt.
  4. Spread the avocado mixture evenly over the toasted bread slices. Top each slice with a cooked egg. Sprinkle with additional sea salt and freshly ground black pepper to taste.

Pro Tip: For added flavor, sprinkle the avocado spread with everything bagel seasoning, chili flakes, or a drizzle of olive oil before adding the egg.
