Chocolate Energy Bites

Ingredients:
- 1½ cups oat flour (or blend whole oats into flour)
- 1 cup pecans or walnuts
- ⅓ cup creamy natural cashew butter*, well-stirred
- 10 soft Medjool dates, pitted**
- 1 teaspoon pure maple syrup or vanilla extract
- 2 tablespoons almond milk or water, plus more as needed
- ½ teaspoon sea salt
- ½ cup mini dark chocolate chips
Instructions:
- In a food processor, combine the oat flour, pecans, cashew butter, dates, maple syrup, almond milk, and salt. Pulse until the mixture holds together when pinched. If the mixture is too dry, add more almond milk or water, 1 teaspoon at a time, and pulse again.
- Transfer the mixture to a mixing bowl and fold in the chocolate chips. Use a 2-tablespoon cookie scoop to portion out the mixture, then roll into balls with your hands.
- Store the energy bites in an airtight container in the refrigerator for up to 1 week or in the freezer for longer storage. To thaw frozen bites, let them sit at room temperature until soft.
