Chocolate Chip Oat Squares

Ingredients
- Smooth, creamy natural peanut butter (1 cup)
- Honey (⅔ cup)
- Vanilla extract (1 teaspoon)
- Sea salt (heaping ½ teaspoon)
- Whole rolled oats (2½ cups)
- Mini chocolate chips (⅓ cup)
- Pepitas or crushed nuts, such as peanuts or cashews (3 tablespoons)
Instructions
- Line an 8x8-inch baking pan with parchment paper.
- In a large bowl, mix the peanut butter, honey, vanilla, and sea salt until smooth.
- Add the oats, chocolate chips, and pepitas (or nuts). Stir thoroughly until the mixture comes together—it may seem dry initially, but keep mixing!
- Transfer the mixture to the prepared pan. Use a second sheet of parchment paper and the back of a measuring cup to press it firmly and evenly into the pan.
- Refrigerate for at least 1 hour before slicing into bars.
- Store the bars in the fridge for freshness.
