Chocolate Chip Oat Squares

Ingredients

  • Smooth, creamy natural peanut butter (1 cup)
  • Honey (⅔ cup)
  • Vanilla extract (1 teaspoon)
  • Sea salt (heaping ½ teaspoon)
  • Whole rolled oats (2½ cups)
  • Mini chocolate chips (⅓ cup)
  • Pepitas or crushed nuts, such as peanuts or cashews (3 tablespoons)

Instructions

  1. Line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, mix the peanut butter, honey, vanilla, and sea salt until smooth.
  3. Add the oats, chocolate chips, and pepitas (or nuts). Stir thoroughly until the mixture comes together—it may seem dry initially, but keep mixing!
  4. Transfer the mixture to the prepared pan. Use a second sheet of parchment paper and the back of a measuring cup to press it firmly and evenly into the pan.
  5. Refrigerate for at least 1 hour before slicing into bars.
  6. Store the bars in the fridge for freshness.
