Cheesy Wraps with Special Sauce

Ingredients

For the Special Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons finely chopped dill pickles
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

For the Wraps:

  • 1 pound lean ground turkey or beef
  • 1/2 cup finely diced red onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 large whole-wheat tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded Colby-Jack cheese
  • Pickle slices (optional, for extra tang)

Instructions:

  1. In a medium bowl, combine mayonnaise, chopped dill pickles, mustard, vinegar, paprika, garlic powder, and onion powder. Stir until smooth and creamy. Cover and refrigerate to let the flavors meld while preparing the wraps.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until softened. Add the ground turkey or beef, breaking it up with a wooden spoon, and season with salt and pepper. Cook until browned and fully cooked. Drain any excess grease.
  3. Warm the tortillas slightly for easier folding. Spread a generous layer of the special sauce across the center of each tortilla. Add a portion of the cooked ground meat, followed by shredded lettuce, cheese, and optional pickle slices for a zesty kick. 
  4. Fold the sides of the tortilla inward, then roll tightly into a wrap. Slice in half if desired, and serve warm.
