Caprese Focaccia Sandwiches

Ingredients:
- 4 squares of focaccia bread (3.5-inch), halved
- A handful of fresh arugula
- 1 (8-ounce) ball fresh mozzarella, sliced
- 2 large tomatoes, sliced
- ⅓ cup roasted cherry tomatoes (optional)
- Pickled red onions (optional)
- Fresh basil leaves
- Extra-virgin olive oil, for drizzling
- Flaky sea salt
- Freshly ground black pepper
Instructions:
- Slice the focaccia squares in half to create sandwich tops and bottoms.
- On the bottom half of each focaccia slice, layer the arugula, mozzarella slices, and fresh tomato slices.
- Add roasted cherry tomatoes and a few pickled red onions for extra flavor, if desired.
- Top with fresh basil leaves, then drizzle olive oil over the assembled ingredients.
- Sprinkle it with flaky sea salt and freshly ground black pepper to taste.
- Place the top half of the focaccia slices over the filling to complete the sandwiches.
