Caprese Focaccia Sandwiches

Ingredients:

  • 4 squares of focaccia bread (3.5-inch), halved
  • A handful of fresh arugula
  • 1 (8-ounce) ball fresh mozzarella, sliced
  • 2 large tomatoes, sliced
  • ⅓ cup roasted cherry tomatoes (optional)
  • Pickled red onions (optional)
  • Fresh basil leaves
  • Extra-virgin olive oil, for drizzling
  • Flaky sea salt
  • Freshly ground black pepper

Instructions:

  1. Slice the focaccia squares in half to create sandwich tops and bottoms.
  2. On the bottom half of each focaccia slice, layer the arugula, mozzarella slices, and fresh tomato slices.
  3. Add roasted cherry tomatoes and a few pickled red onions for extra flavor, if desired.
  4. Top with fresh basil leaves, then drizzle olive oil over the assembled ingredients.
  5. Sprinkle it with flaky sea salt and freshly ground black pepper to taste.
  6. Place the top half of the focaccia slices over the filling to complete the sandwiches.
