Bacon Noodles (Túrós Csusza)


This is an Ahvina children favorite!

Ingredients

  • 6 slices thick-cut bacon, diced
  • 8 ounces egg noodles, broken lasagna noodles, or pappardelle (cut into 1- to 2-inch pieces)
  • 1 ⅓ cups dry curd cottage cheese, at room temperature
  • ½ cup sour cream, plus more if desired, at room temperature
  • Kosher salt and freshly ground black pepper, to taste
  • ½ teaspoon smoked paprika, for garnish (optional)
  • Sliced scallions or chopped parsley, for garnish (optional)

Instructions

1. Cook the Bacon:
Place the diced bacon in a cold skillet and turn the heat to medium. Cook, stirring occasionally, until the bacon is crispy and the fat has rendered, about 8 to 10 minutes. Remove the bacon with a slotted spoon and transfer it to a paper towel-lined plate. Leave the bacon drippings in the skillet but turn off the heat.

2. Cook the Pasta:
Meanwhile, bring a large pot of salted water to a boil. Add the noodles and cook until al dente or slightly more tender, according to your preference. Drain well.

3. Assemble the Dish:
Reheat the skillet over medium heat and add the drained pasta, tossing to coat in the bacon drippings. Stir in the cheese and sour cream, seasoning with salt and black pepper to taste. Gently toss everything together and cook for about 3 minutes, until the cheese begins to soften and the sauce coats the noodles.

4. Serve & Garnish:
Transfer the pasta to bowls or a serving dish. If desired, drizzle with extra sour cream. Top with crispy bacon, a sprinkle of smoked paprika, and fresh scallions or parsley. Serve immediately and enjoy!
